The product team has released the SharePoint End User Training Kit - http://blogs.msdn.com/sharepoint/archive/2007/10/11/sharepoint-end-user-training-kit-now-available.aspx . The SharePoint Server 2007 Training includes interactive demos, videos, and articles. You can customize the training to match your site look and feel or use it as is. The SharePoint End User Training Kit will also have a standalone deployment option, which can be installed on a PC and used by an individual. This version of the kit will be available within the next few weeks.
